1 cup of dates (buy the pitted vacu-mush packages)
1 cup of boiling water
1 tsp. baking soda
1/4 cup butter
¾ cup sugar
1 egg
1½ cup flour
1 tsp baking powder
1 tsp salt
1 tsp vanilla
Directions for cake:
Put the finely chopped-up dates in a bowl and add boiling water. Let it sit until the water is lukewarm (it should liquefy the dates). Add baking soda and mix well.
In another bowl cream the butter, sugar, and egg with your blender. In another bowl mix all the remaining dry ingredients (flour, baking powder, salt), add it to the blended stuff, and add the vanilla. Add the liquid date mixture. Mix well. Bake at 350 (in about a 9x9 inch pan) for 35-40 min.
Icing for cake
(Needless to say if you want more icing, use more ingredients)
3 tbsp butter
5 tbsp brown sugar
2 tbsp cream
¼ cup of shredded sweetened coconut
Mix these together and bring them to a boil. Let cool and pour over the still warm cake. Enjoy!
