2 Cups packed brown sugar
1 cup margarine or butter softened
1 teaspoon vanilla
2 eggs
2.5 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon of salt
3 cups quick-cooking or regular oats
2 tablespoons margarine or butter
1 can (14 oz) sweetened condensed milk
1 package (12 oz) semisweet chocolate chips
1 cup chopped nuts
1 teaspoon vanilla
1/2 teaspoon of salt
Heat oven to 350. Mix brown sugar, 1-cup margarine, 1 teaspoon vanilla and the eggs. Stir in flour, baking soda and half teaspoon of salt; stir in oats. Reserve one third of the oat mixture. Press remaining oat mixture in greased jelly roll pan, 15.5 x 10.5 x 1 inch.
Heat 2 tablespoons margarine, the milk and chocolate chips over low heat, stirring constantly, until chocolate is melted; remove from heat. Stir in nuts, 1 teaspoon of vanilla and half a teaspoon of salt. Spread over oat mixture in pan. Drop reserved oat mixture by rounded teaspoonfuls onto chocolate mixture. Bake until golden brown 25 to 30 minutes. Cut into bars about 2 x 1 inch, while warm. 70 bars, 135 calories per bar.
The recipe above is copied directly from a Betty Crocker cookbook. I usually omit nuts (my kids don't like them) and find they are cooked enough after just over 20 minutes (I don't like them overdone). They freeze will if you make the full recipe but I have made half and baked in a square pan instead.
